                            I did this before it is an absolute mess. Egg whites definitely worked better but still had the same issue where it wasn't sticky enough. What I did the 2nd time was cut a completely frozen ben and jerrys in half and got like a puck shape. I added a few spoons of some expensive maple syrup to the egg whites. The one that's a little more liquidy then the cheap brands. I crushed up FROSTED flakes way more then what you did. I found that the combination of the stickiness from the maple syrup, the crushed up sugary frosted flakes, and the puck shape helped keep the flakes on the ice cream way better and gave it a thicker fried skin. I couldn't even see the ice cream.

                                  we used to serve these in a restaurant i used to work at and they had them prepped in the freezer with the oats and cinnamon mixture already coated on the ball of ice cream so all the cooks had to do was grab one out and throw it directly in the fryer. and then we covered them in honey. so effing good.

                                                              Next thing you should do is do the same recipe but with churro for the outside and then deep fry the ice cream but leave the ice cream in the freezer for 2 hours and you can make it into a ball with plastic wrap

                                                                      Julien your hands literary produce heat, you're 36°C while touching an ice cream. If you used a tool in ambient temperature (27°C or less) to handle the ice cream and crushed the cornflakes more it would have worked better.
